Roasted Cod & Tomatoes

Ingredients

Two 8oz Cod portions
Cut tomatoes
Minced garlic
Olive oil
Salt & pepper
Sliced onions (optional)

Instructions

Pre heat oven 375°. Place in either foil or dish that can be covered add the chopped tomatoes and onions (optional) save a couple of each Tomatoes and onion for later. Place fish on top with olive oil, garlic, salt, pepper and remaining tomatoes and onions . Bake covered for 15-20mins or until fork tender.
